Tortellini with
Chunky Tomato Sauce
This chunky tomato sauce pairs perfectly with our Beef & Mortadella Tortellini for a quick but hearty dinner.

method
Get a pot on to boil.
Set a small saucepan over medium heat. Warm oil then add shallots along with a pinch of salt. Cook until softened then add garlic, cooking 1-2 minutes to take the edge off. Tip in the chopped tomatoes, sugar and another large pinch of salt. Cook for 5 minutes more, further breaking up pieces of tomato, to desired consistency. Taste and season with salt and pepper.
Cook the tortellini according to packet instructions.
Spoon hot pasta into tomato sauce and toss to coat. Top with fresh basil and parmesan, if you like.
